Lemon and Mint Granita

hen the weather is so hot that you can’t even think clearly, the best thing is to get to the beach and take a dive into the sea, right? It just washes off all the heat, the sweat and the fatigue; it wipes all the stress and brings back the harmony between you and Mother Nature. The pleasing smell of old pine trees clears your mind and makes you breathe slower and deeper, so in spite of the noise made by the sea breeze that makes its way through the treetops, and tireless, loud cricket choir, it is so easy to relax and take a nap under the rustling branches… What a fantastic feeling!

Well, if the sea is far away from you, or you simply don’t have enough time to go and take a nap under the pine trees, I have a little treat for you. Now, I’m sorry – I can’t recreate the smell of pines, or cricket’s symphony, but I can offer you a wonderful refreshment! Remember granita, one of the frozen desserts? Today we are making lovely and refreshing lemon and mint granita! I know, it’s not quite the same as taking a swim, but it will cool you on a hot day and bring a smile to your face, I promise! You will need a couple of lemons, preferably not treated, sugar, and some mint extract and leaves. Like with every other granita, you need to mix everything in a blender and pour the mixture in a bowl. Leave it in the freezer for a coule of hours, and then scrape the ice crystals with a fork. Serve in a glass and enjoy the summer!

Lemon and Mint Granita Recipe

Ready in 5 minutes plus freezing

Level : Basic

Ingredients:
  • Lemon juice 75g (2.6oz)
  • Water 250g (8.8oz)
  • Sugar 125g (4.4oz)
  • Lemon zest 4g (2Tbsp or zest out of two lemons)
  • Mint extract 2 drops
  • Turmeric powder 1⁄4Tsp
  • Mint leaves to taste
Directions
  1. Put all the ingredients except mint leaves into a blender and blend well.
  2. Pour the liquid into a bowl, and leave it in the freezer for a couple of hours.
  3. Scrape the ice crystals and put the mixture back in the freezer. Repeat the process until all the liquid sets.
  4. Serve granita in glasses, and decorate it with some fresh mint leaves.
